I have just returned from my weekend at Living Light Culinary School and the Science of Raw Food Nutrition Level 1 class. All I can say is... wow! I can't believe how much I learned in only two days. I came away from it not only inspired to learn more, but with a real understanding of the science behind nutrition in the SAD and raw food lifestyles. Now I will be able to promote and defend the raw diet intelligently - with the science to back it up. Go ahead and ask me "Where do you get your protein?" Boy, is that an interesting subject! And why raw foodists don't seem to age? Also intriguing!
I met so many people on this trip who healed disease through raw foods... the implications are staggering. Oh, and on a more superficial level, how about the instructor whose white hair turned back to brown after going raw? Pretty cool.
The school and instructors were so impressive, the students were so nice - and the food... amazing. I still have a lot to learn!
This class was a great first step and now that I've taken it I want to keep going. I'm definitely returning for the Associate Chef and Raw Foods Instructor training and hopefully the level 2 nutrition class as well.
I'm really coming to see how needed raw food educators are. Popping pills and treating symptoms doesn't work anymore. We need to approach our health from a holistic standpoint and there's nothing out there that can heal us the way our food can.
Of course Hippocrates said it best - "Let food be thy medicine and medicine be thy food."
Our life is the sum total of our choices. We always have a choice.
